I am attending a "marketing summit" next week at the promotion

company that I work for part-time. What started out as a thank you brunch has now turned into a light brown bag lunch that I will be compensated for (I barter for my rent at the cafe by working there and providing food for them on occasion).

I really didn't want to do lunch because I have so much to do to get ready for the next weekend. But, I agreed. So, here is what I have come up with so far. I want to keep the expenses and labor as low as possible.

Pinwheels (roast beef, turkey etc.)

Fruit Salad

Potato Salad

Brownies

Pumpkin bread

Any ideas to add or comments? Thanks!

 
What about a green salad instead of a potato salad?

they're so easy to throw together and you can make it pretty with some fruit and well as crunchy things.

Seems like people want salad all the time these days...

 
NFR: Think about the attendees as potential clients

I don't have "food" ideas but would agree to go with things that are easy and low cost but showcase your extreme foodie awesomeness. Something "Wow."

And make sure that your name/contact-id is there. Maybe emboss the bag, or a napkin or something clever. Include a coupon to your cafe or invite to an upcoming event. Again, something easy and low cost but a "Wow."

You never know when one of the attendees will lead you to your next major gig! Colleen

 
Good advice! I thought I might do skewers

with a grape tomato, mozz cheese cube, tortellini, salami cube, and I think there was one more thing, but I can't remember at this early hour, maybe after my first cup of coffee. Marinate them in a vinaigrette. Also a sliced baguette with a spread and a veggie tray.
This is an all day meeting so I want portable foods that are substantial enough to give everyone energy but not make them sleepy. Thanks everyone!
