I am entering in a chili cook-off at my son's high school, proceeds go to the quiz bowl team.

Any great recipes. I have a good one, but love to see some others.

No white bean chili recipes though. I have a feeling that wouldn't go over too well. Thanks!

 
I realized that I actually know nothing about the contest. I don't know

who is judging, if I have to serve it, etc. I will get more information from my son when he gets home.
I did read that the proceeds actually go to the March of Dimes.

 
The recipes that always win at our office are very standard, (think Wendy's) and

are not spicy or exotic at all. It seems the preference is for a good homey, hamburger, beans and tomatoes style chili with just a hint of chili seasoning.

That may just be the southern palate preferences in our region, but every year, we have some really interesting and sophisticated entries that go largely untouched.

 
I would go for good deep flavor, sort of background heat and would use ground pork for

the meat.
Can you do "condiments" with it--fresh chopped onions, some avocado, sprinkle of cilantro?

 
Real Chili-Claiborne's Pecos Valley Bowl of Red

You can use all mild chili (ground ancho).

PECOS VALLEY BOWL OF RED (CHILI)

1 tablespoon bacon drippings
1 large onion, coarsely chopped
3 pounds beef, coarsely ground
1 1/2 teaspoons garlic, minced
1/4 cup ground chili peppers, red hot
1/4 cup ground chili peppers, red mild
1 tablespoon ground cumin
3 cups water
2 teaspoons salt
Melt bacon drippings in heavy Dutch oven; add onion and cook about 5 minutes until tender. Mix meat with garlic, chiles and cumin. Add to the onion and cook, stirring often, about 15 minutes until the meat loses its pink color. Stir in the remaining ingredients. Simmer uncovered 3 to 4 hours or until the meat is very tender and flavors are well blended, adding more water as needed. Adjust seasonings to taste. Makes 8 servings.

Serving Size: 8

 
I would put thoughts into fun toppings. Be creative...

Frito Chips
Scallions
onions
cut up avocado
grated cheddar
chopped bacon
sour cream
Chopped tomato
fry up some mini thin long french fries

While the above is not customary, it would be fun for high school boys!

I came in fourth in the cook-off. I am not very happy about it

either. I realized that I am used to being the best at most things; cooking. My son said it was rigged. The band had the most desired placement and a ton more support showed up. I know it was one of my best batches of chili to date.
Sour grapes and a poor loser are my new names now. smileys/smile.gif
