I am loathe to return an empty plate. What can I make to put on it that’s diabetic friendly?

I need to return a plate from a neighbor, but I’ve never returned a plate empty in my life, but I’m really struggling to think of something good that’s diabetic friendly, which of course means I’m a sugarholic, but nothing new there. I just didn’t realize it was this bad!

Does this person lean toward sweets or savory? My MIL was diabetic and always kept peanut butter

around. Maybe an oatmeal cookie with peanut butter (oatmeal ingests slowly) with a sugar that is diabetic-friendly? Bagged individually so no binging.

Savory side: bags of some sort of roasted nuts?

Blanched or grilled asparagus rolled up in prosciutto, roast beef or any thinly-sliced...

...deli meat. Smear a little herbed goat cheese on the meat before rolling them up.

Arrange in a fan-out pattern and at the base place a few slices of cucumber or tomato in a fan pattern.

Pretty and diabetic friendly.

Also, first time ever rats are eating the lemons. Several neighborhoods are having this problem

I didn’t even know this could be a thing. But I’m finding some lemons stripped of their Rind while still on the tree and the local newspaper said that this is a sign of rats or squirrels eating them. Never in all my years have I seen this!

Yep, rats eat citrus. As a member of The Urban Farmers organization, harvesting

excess backyard fruit for donation to the needy, I saw what rats can do to citrus. In this area it's primarily Norway rats and roof rats.

In my yard they haven't touched the lemons but they're quite fond of the figs, plums and peaches (buggers!).

At the link are images of citrus hollowed out by rats.

Yep, rats eat our oranges regularly. And Aside: did you know ducks love lemons. . .

and limes? When I throw halves of lemons or limes into our Chicken Bucket to take up to the chickens and ducks. The next day the halves are floating in one of the water pans or in the duck swimming tub. Another fun observation: Ducks also go bonkers for cherry tomatoes!

when we lived in the Sonoran Desert...

We had rattlesnakes on our property in very bad places like hanging out in the shade right where you step out of the front door. The first time this happened my wife called the fire department. They came out grabbed the snake and threw it over the fence of our backyard. We were city-folk shocked. This happened again a while later and when they threw it over the fence a second time we were like "What gives here?" Turns out that the rattle snakes were not only NOT discouraged from being around homes but in fact encouraged. The reason: Pack Rats. Rattlers were the most effective defense against pack rats and so what if your child steps outside your front door and gets a rattlesnake bite every once in a while...
Apparently among other problems, the pack rats harbor kissing bugs which harbor a very dangerous parasite.

Lemon Mourning...

All of the baby lemons fell off my tree while I was off in NYC. I watered it thoroughly before I left, but it dried out while I was gone and dropped all the fruit.

I still have limes however so not all is lost.
