I am loving the sweet potatoes with the redish skin and bright orange interior

I rub coconut oil (from Trader Joe's) all over the skin, then bake. We put white truffle butter, coarse sea salt, and freshly ground pepper inside. Pure heaven. Sometimes I had a sprinkle of Piment de Espelette. Serving tonight with grilled pork chops, and home made applesauce. Salad consists of baby arugula, blueberries, candied almonds, and a lemon, honey vinaigrette.

I forgot Karen, what time would you like me there? : ) Sounds wonderful! Does coconut oil

taste like coconut? dh does not like coconut at all. I keep reading how it has such great nutritional value. I have hesitated using / purchasing the oil because I think dh will last coconut. He does like the smell / taste. (Problem w/ some of the sunscreens that I like to use!)

Would appreciate your thoughts!

I love Trader Joe's coconut oil because it is so pure. It smells just like a fresh coconut

is a clean white, and melts beautifully. Some folks claim they can taste coconut oil in their foods, but I cannot. I love how it crisps up the skin on a sweet potato. I use it for stir fry sometimes and it browns nicely, but still, no over powering taste of coconut for me. I've used it to brown scallops and again, it does a nice job.
I love the smell of it, and often just open the jar to take a sniff, but I do this with a lot of things. I have a new jar of Penzey's red and green dried bell peppers, and I do the same to that. Crazy, huh?
Go to Amazon.com and read the reviews about it.....they are very interesting.

One of my favorite kitchen aromas is when I make my version of SallyBR's pumpkin curry. I saute...

...the fresh minced shallots and ginger in TJ's coconut oil. Oh my, does it ever have a delightful perfume!

I just made a triple recipe of the pumpkin curry. It is so good, and freezes well.

I bought a container of LouAna Coconut Oil, not knowing that it was de-scented and processed. It was AWFUL. I only use TJ's now.

I love coconut and WISH it had a coconut flavor, but I don't detect any. I use TJs also.

Very neutral in whatever you want to do with it.

Thanks for your thoughts. I think I may give it a try on a day I am not cooking for dh, and give

it a shot~

I love TJ's coconut oil, too. I can't detect a flavor, but my DS can when we use it.

So if someone is a "supertaster" they might be able to taste.

I use it when I pop corn and I can taste the coconut but there are no

other flavorings to compete with the coconut.

The jar I have now is from the grocery store (TJ's was out) produced by Specturm, Organic Virgin Coconut Oil Unrefined For Medium Heat.

The difference is that the Spectrum CO is "Expeller" pressed and the TJ's CO is "Cold" pressed. Expeller pressed is processed at a higher temperature (210) than the cold pressed (120) therefore you get a toasted coconut smell and flavor. And, I assume, this is the reason you can heat the cold-pressed to a higher temperature.

The link gives more information on expeller vs. cold pressed.
