Do you know how long it takes to caramelize 10 large onions? A really long painful flipping long time! This is going to be a really early AM cooking job. It reminds me of my markets. Sigh. All of the pressure and none of the money. smileys/tongue.gif

 
No, I don't think so. They are like fried onions, only slower. Did I say

that I hate the new tv, it is so flipping big, it is obnoxious.
Anyway, I digress. The onions are carmelized, the chicken is added in, as well as the cream cheese and the enchilada sauce. I am just too tired to make anything else tonight. I will have to do the rest in the morning. That cold crud thing really takes it out of you. I haven't felt so tired in such a long time, and it is over a week that I had it. Please don't even let me get the flu.
Lost in KCation. That was where I spent my day. And with no foodie thing as a result. That sucks.

 
It's all fine, I was just a little

winey last night. I am making the chicken tortilla soup, black bean salad, grape salad, and will make the enchiladas just before I head out. At least these are recipes I can almost literally make in my sleep. Thanks everyone!

 
at work, my ovens are always on, I do them in a dutch oven in the oven. Glad you relaxed, have fun!
