I am so tired. Two luncheons this last week, and a dinner tomorrow

night for 90. When it rains, it pours, or snows. Luckily the storm they predicted for us, went South and missed us. Yay! Well, I was actually hoping the storm would hit us and I wouldn't have to do this dinner.

I am so not enthused about this menu and believe me this was not my choice. I offered baked beans, and they were nixed.

Pulled Pork on Buns

Cheesy Hash Brown Casserole

Cole Slaw

Brownies

Acckkkkkkkkkkkkk!!!

What would you charge for this dinner; any caterers out there? (Joe and wigs)

This is a dinner that is credit towards my kitchen rent. I am feeding 90 people with the above menu. I should have ironed it out before, but since it is credit on my rent, no one really made a big deal about it. Joe and wigs, I could use your help here. Thanks!

Dawn, I have no idea what the prevailing prices are in your area. Ask a barbecue place

in town what they would charge for catering a 90-person event? Maybe ask a couple. Then you'd have a point of reference. Be sure to ask what it would cost to have the event served-not just food dropped off. I imagine you will have to hire some help, and that should be added on or figured into the per-person price.

For what it's worth, I would probably have charged $25 per person, plus the $250 base fee I charge for all events.

I'll ask a friend that does catering and BBQ - he should have a pretty good handle on it

and we are probably closer to your market.

Also I will pull you the price I paid for another friend that actually has a BBQ joint to cater our student scholarship awards and send off. It was for about 60 but you can take it from there. I can also link you to his website that has prices (he does give me a little bit of a special deal).

Here are their menus with some prices.

Here is what I get for our student send off.

Here is what I suggest for 60 ppl for Sunday afternoon:
Pulled pork - 12 lbs
Buns - 4 dozen
Baked beans - 2 qts (1 pan)
Squash casserole - 6 qts
Corn pudding - 4 qts
Baked potato salad - 2 qts
Banana pudding - 4 qts
Blackberry cobbler - 4 qts
Sweet & unsweet tea - 1 gal ea

Total = $308 plus tax & $20 deliver

Dawn, I can't help with pricing but I do want to wish you luck and

moral support. This is a busy time in general and I know you're tired but just try and remember how hard you have worked to get this all going. Make this the BEST pulled pork and all the others that they have ever had! Your name is on it and it is future business. It may not feel important because there is no cash going in your pocket but later, when you don't have to pay that rent for how many months, you will appreciate what you have put into it now. Wish I could come help you out. Good luck...deep breaths.

BBQ places here get about $8/plate. Dessert would be

extra.
Our family reunion caterer serves pulled pork, fried chicken, slaw, beans, potato salad, tea for $8.50. THAT is a smokin' bargain.
I have sold several charity dinners for 25 with more than your menu for $500.
The whole hog caterer we had for DD';s wedding party was $1200 for 50 people==he brought the smoker to us!! Bar none, I have never had pulled pork that good--it was almost creamy tasting. 60# hog, heritage, fresh killed.
I think a catering rate would be $10-15 here. Hope this helps..

At least it's an easy menu. Sometimes, especially during the busy season, low-hanging fruit is best!

Dawn, sorry I'm so late in response but have been catering myself. 'Tis the season! Are

you delivering only? Staying to set up and serve? Using your platters and serving trays? Supplying paper products and plasticware? Are you assembling the sandwiches, or will the guests do that themselves? (Over the years I've learned that people will literally PILE ON the meat when they make their own sandwiches so I have to supply more than I do if I myself put the X number of ounces on each bun that is more than sufficient.) Since your food is all homemade, the price should be higher than any local run-of-the-mill BBQ pit. I just did an appetizer and dessert party for 40 on Dec 13 where I spent $75 for garnish alone. All of the above is factored into my final price/estimate. Hope this helps you some. Wigs
