I did find this rub in my files from Gail's and I noticed the book referenced has high marks at Amazon (does anyone have it?).

Jamaican Jerk Rub *delish!*

This is one of my personal favs... I made up huge batches and gave in
gift baskets for Christmas.....I found the recipe in a great Cook Book called SMOKE and SPICE We use this on chicken, steaks, pork chops, shrimp, even burgers!

Makes 1 1/2 cups

6 tbsp onion powder
6 tbsps dehydrated onion flakes
2 tbsps ground allspice
2 tbsps fresh ground black pepper
2 tbsps cayenne
2 tbsps turbinado sugar
4 1/2 tsps dried thyme
4 1/2 tsps ground cinnamon
1 1/2 tsps ground nutmeg
1/4 tsp dried ground Habanero chilies (opt)

Mix all together thoroughly. Store in a covered, air tight container, in a cool dark place.

 
Here is a menu for a tropical pool party I catered a while back. It was a high school graduation

so the food was still pretty basic. I did jerk beef kebabs with Sylvia's marinade--it would be great on chicken, and it could be done in the broiler since I know you have not been having grilling weather. The chicken mango salad is one of my favorites.
