I am thinking of making this tonight, Chicken in Milk.

I've done this with pork roast, which is Italian, I think. Kinda funny, the first time I did it, I

thought the curds in the milk were a mistake I'd made. It's really good with pork, should be with chicken.

 
My Indian cookbook has a dish for lamb cooked in milk that I've been wanting to try. I agree with

Barbara. Go for it!

 
Did I tell you I did a morning at his Recipease 2 weeks ago? Quite an interesting....

concept. One goes there to put together a dish one has previously booked. Everything has been prepped for you.....Then you take it home to cook.

I did a pork tenderloin en croute (sage, rosemary, mozzrella pancetta wrapped in puff pastry)...and a rubarb crumble, both very nice.

Friend did a lasagne and tiramisu.

Really for those who dont cook but being there in that shop/kitchen is such a far cry from here on island.

You can take home the dishes in throw aways or buy the latest craze .... old become new again....enamel dishes. I get 2 both perfect sizes a small and a large.

Every thing is fun when it is not the norm.

 
Oops, I'm trying this tomorrow - Thursday night didn't work out with this recipe,

My friend for whom I was making dinner was not enamoured of the milk idea and after reading Jaime Oliver's site it seems either you'll like it or it sounds gross! Instead I did the seared chicken from Red Hat and it was great. You bone out the bird from the back and pan sear it then finish it in a very hot oven. Yum.

But tomorrow i'm off to TJs and make this dish, then a nice batch of mashed potatoes and some nice veggie. I'll be sure to take a picture of the chicken!!

 
I think that same concept is done here in the states, I remember there's one in the Dallas area,

but I can't remember the name. I wish my daughter had access to one, they might eat better.

 
I nevah mention what it is cooked in/with (if it is pretty ordinary sort of ingredients) until .....

'they' have tried it...(got to know dietery problems of guests) and in this case I only told them after there was no more left....it is after all a 'thinner cream' and it is really quite a hit.
