I am using a box mix. Do I use the paddle or whisk attachment from my KA?

This is Duncan Hines cake mix. I always ask myself the question, when to use the paddle and when to use the whisk.

 
I use the paddle, unless I am trying to aerate the batter, e.g. whipped egg whites for...

...a chiffon-type cake.

Never had any issues.

Side note with box mixes: be wary of older recipes that call for a box mix. They *used to be* 18 oz

of dry mix. The ones selling now are only 15 oz. That could make a difference with the amount of liquid called for in the original older recipe.

 
Wow, never thought of that. Now how do I know what the original was?

I still follow the recipe on the box, so I am okay. I think the manufact. make adj. to their recipes if the box weight is changed otherwise the customers would be complaining how the recipes are not working.

 
I am sure they have adjusted the recipes on the box, and you are right about the complaints

that would come in.

 
No, I'm talking about older recipes that would use a dry box mix as a key ingredient.

I had a whole stack of old church recipe books...the kind that include Mrs. Macowski's Dump Cake for example.

Those would be the recipes you might have to tweak.

 
This has become a pet peeve, everyone is reducing sized, a pound of whatever is now 12 oz

from coffee to pasta, beans, potato chips.... do they think we won't notice? It really does mess up when the recipe calls for 16 oz of something and you have to buy several packages and get weird amounts of leftovers...
