And here are two tasty chili recipes we like. The first one calls for raw ground turkey but you could just use your cooked turkey, adding it more toward the end.

Turkey or Chicken Chili

2 tbsp vegetable oil
1/2 cup chopped onion
1 tbsp minced garlic
1-1/2 tsp ground cumin
1/2 tsp cumin seed, bruised
1 lb. ground white meat turkey (or 1 lb. chicken breasts, cut up in small chunks)
1/2 cup cooked/cooled white rice
1 15-oz. can garbanzo beans, drained/rinsed
1-1/2 tsp minced jalapeno
1 medium tomato, chopped
4 cups chicken broth
3/4 tsp marjoram
1/2 tsp savory
salt and black pepper to taste
1/3 cup lightly packed cilantro, chopped
Optional: 1-1/2 cups shredded cheddar or Monterey jack cheese

Heat oil in large heavy skillet over low heat. Saute onion and garlic about 4 minutes, add cumins and cook about 1 minute. Add ground turkey (or chicken) increasing heat to medium and cook, stirring, until turkey is no longer pink. Add remaining ingredients except cilantro and cheese and bring to a boil. Reduce heat to low, cover and simmer about 20 minutes, stirring occasionally. Remove cover, stir in cilantro and simmer another 5 minutes. Add more salt and pepper, if desired. Serve chili topped with shredded cheese, if desired or serve with quesadillas.

Leftover Turkey or Chicken Chili
This is a white chili, using leftover cooked turkey or chicken, with a nice spicy kick. This is strickly a white chili, no tomatoes, red beans, or chili powder of any kind.

1 tablespoon vegetable oil
1 onion, chopped
3 cloves garlic, crushed
1 (4 ounce) can diced jalapeno peppers
1 (4 ounce) can chopped green chili peppers
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
2 (14 1/2 ounce) cans chicken broth
2 cups chopped cooked turkey breast or cooked chicken breasts
2 (15 ounce) cans white beans (cannellini, chickpea, great northern, etc)
1 cup shredded monterey jack cheese

Heat the oil in a large saucepan over medium-low heat.
Slowly cook and stir the onion until tender.
Mix in the garlic, jalapeno, green chile peppers, cumin, oregano and cayenne.
Continue to cook and stir the mixture until tender, about 3 minutes.
Mix in the chicken broth, turkey or chicken and white beans.
Simmer 15 minutes, stirring occasionally.
Remove the mixture from heat; slowly stir in the cheese until melted.

Do I understand that you want to use the wing meat? I would guess that something

shredded would work well. We love the chicken enchiladas done with turkey and shredded wing meat would be perfect.

CREAMY CHICKEN ENCHILADAS (serves 5-6)

3 garlic cloves, chopped, 1 large onion, chopped
2 T butter
2 C shredded cooked chicken
2 C picante sauce (PACE Medium)
3 oz cream cheese
1 T ground cumin
2 T chopped fresh cilantro
1/2 C sliced black olives
1 small green pepper, chopped
2 C shredded Cheddar and Monterey Jack cheese
10-12 corn tortillas
vegetable oil
chopped green onion for garnish

Cook onion and garlic in butter until translucent. Stir in chicken, 1 C of the picante sauce, cream cheese, green pepper, and cumin. Heat through, then add cilantro and olives. Add 1 C of the mixed cheeses, then set aside.

Soften the tortillas in the oil. Heat about 1/4” of oil in a 10” sauté pan at medium-high. Put each tortilla in the oil for 3-4 seconds on each side, then drain on paper towels.

Spoon some of the mixture in each tortilla, roll up and place in a 10x14" baking pan. Pour over the rest of the picante sauce, sprinkle the remaining cheeses on top, and bake about 15-20 minutes at 350̊. Sprinkle with the green onion.

 
I just drove home through the marshes and they were blazing not 30 feet away.

I'm lucky I got through before they shut down the highway...I would have had to turn around and go back about 70 miles. Luckily that area doesn't have high pines so the fire doesn't jump the highway.

 
and we have a volcano huffing and puffing away. face masks and car air filters are sold out. I'm

headed down even closer to it this weekend, but it's still far enough away that ash fall would be the only hazard---or an earthquake triggered by the volcanic activity. fun times. it's Mt Redoubt.

 
thanks, but I have mine already! We have had lots of warnings, so nothing will probably happen.
