it's called "French cookery school" and is by Anne Willain of La Varenne cooking school in Paris.

It's printed in 1980.

Does anyone know anything about her? The book looks great - but I haven't tried any of her recipes yet.

 
I have that one and quite a few of her other ones....

and she is very good and precise with her techniques. They are especially good for learning techniques but I've done quite a few recipes out of them and never had any problems with them. I'll look at the ones I have dog eared and tell you which ones later.

I didn't know she has published more cook books but I'd love to know if you could recommend some of her other books because - as I said - I already like her smileys/smile.gif

I like her recipes but as a person...

she is not among my favourites. Years ago (about 10) I attended a week of 'cooking school' at the Greenbrier (West Virginia) - her name is attached to the school (it also features guests chefs each week: Graham Kerr and the White House Chef (forgot his name) were the guests the week I attended). Anyway - I definitely learned quite a bit - but she was quite full of herself and I was put off by the way she treated her "lessers" (staff).
