I bought a "cupcake tree" at the WS outlet, and want to use it for dessert at our

patbastrop

book club meeting this month. We are reading "The Last Thing on My List". There are about a dozen of us, and the tree will hold 22 cupcakes or cupcake holder desserts.

What should I make? I'm not averse to purchasing re-usable little containers for the holder thingies.

The food theme is, for no particular reason, greek pizza and finger foods.

 
This is one of my very favorite - makes great caramel cupcakes with cloud-like caramel frosting

I've make cupcakes with it, and they were.... yes, heavenly smileys/smile.gif The book by Fannie Flagg is also wonderful, if you need a recommendation for the next book club meeting...

Neighbor Dorothy’s Heavenly Caramel Cake
From “Can’t Wait to get to Heaven” by Fannie Flagg

Preheat oven to 350 deg.

1-1/4 cups cake flour (sift before measuring)
1 cup brown sugar (resift flour with the brown sugar)
Add:
1/2 cup soft butter
2 eggs
1/2 cup milk
1/2 tsp. Salt
1-3/4 tsp. Baking powder
1 tsp. Vanilla

Beat for 3 min. Bake in greased pan for 1/2 hour. Frost with Caramel Frosting.


Caramel Frosting

2 Tbl. Cake flour
1/2 cup milk
1/2 cup brown sugar
1/2 cup sifted powdered sugar
1 tsp. Vanilla
1/4 cup butter, softened
1/4 cup shortening
3/4 tsp. Salt

Mix flour and milk. Cook to a thick paste over slow flame. Cool. Cream sugars and vanilla with butter and shortening. Beat until light and fluffy. Blend in salt. Mix in cooled paste. Beat until fluffy. Should look like whipped cream.

INDIVIDUAL COCONUT RUM CHOCOLATE CAKES

"...They are great on their own, but BEG to be served with vanilla ice cream. (don't be afraid of the rum...you can hardly taste it)"

6 ounces fine-quality bittersweet chocolate, chopped (reviewer used unsweetened)
1/2 cup unsalted butter
1 cup sugar
4 eggs
4 tablespoons dark rum
1 teaspoon vanilla (reviewer used 2 tsp)
1 teaspoon salt
2/3 cup flour
1 cup sweetened flaked coconut, toasted and cooled

DIRECTIONS:

Preheat oven to 350 degrees F.

Butter and flour 12-1/2 cup muffin tins.

In a double boiler (or bowl over pot of water), melt chocolate with butter, whisking til smooth.

Remove from heat and whisk in sugar. Whisk in eggs, one at a time.

Add remaining ingredients, whisking until smooth after each addition.

Divide batter among prepared tins (with 1/3 cup scoops, then top off each), and bake until tester comes out clean 20-25 mins.

Turn cakes out onto rack and serve warm or at room temp.

waht about making baklava type "purses" in muffin tins that would then fit into the cupcake holder?

I've seen a recipe for using shredded philo too to make muffin type pastries. going with the Greek theme here.

 
These make my mouth water! I am about halfway through

the book, and I am enjoying it. It would make a good movie, or even a good mini-series. There are some good suggestions for activities at the end of it, one of which I really like: Give everybody a stack of poker chips. Each person in turn tells the group something on their list -- something they have not done. Anyone who has done that thing can throw in a chip. The object is to get rid of all your chips. It's not "truth or dare", it is about goals and challenges. Sounds pithy, eh?

the baklava idea is cool, Angie! aaahhh, coconut rum chocolate! From Food and Wine, the strawberry shortcake cupcake. Filling the tree with Magnolia chocolate and vanilla would be pretty.
