Today I made Arancini with a Roasted Butternut Squash Salad With Tangerine-Rosemary Vinaigrette, I have never made arancini before, yeah, can you believe? I had a terrible time forming the balls! My back is such a problem and after about 2 hours in the kitchen I just have to go sit down so I just put all of it in the fridge. After I felt better I went at it again and I coated my hands lightly with oil and what a difference it made. I put them back in the fridge for an hour and then fried them. They were perfect and delicious. I did half the recipe and made 4 large balls. I also added a couple of cubes of diced ham in each one. Here is the link for the Arancini.

Ya, a little drama queen going on there...;o) You know between my back

and I HATE this electric stove I really don't enjoy cooking as much anymore. I miss my gas range more than anything.

 
Lol, no, I can really identify with the back thing. I've had my moments and it sure takes the fun

out of cooking. I also gave up a gas cooktop for an electric. Boiling water takes forever because it cycles off all the time and some of my pans don't work well on it but I can actually sauté meat and fish better than I did before. Also, I can maintain a low simmer better. So there were trade-offs. And I just ordered a new sauté pan to replace the All-Clad that is fairly warped. Hoping the new one will work better.

Your recipes look great, thanks for posting them. I've never made arancini. Actually, I don't think I've ever tasted arancini.

 
You're going to have to explain to me how you maintain a simmer

on it. I can't maintain any heat on it. With gas, you set the flame where you want and it keeps it there. I just can't handle the cycling on and off. And the fractures in my back make it all worse. Oh woe is me.....;0)

 
I feel your pain orchid. We go through body changes as we age, and it sure can interfere with

our love for cooking. Those are the days, you keep it simple, yet delicious.

 
If you can beg, borrow or steal, for boiling water nothing can beat an electric kettle. . .

beats the bejasus out of boiling water on the stove. Ours does about 6-8oz cups at a time, and fast.
