I cannot recall when I last burnt something or almost did: Pain De Campagne sourdough bread w/yeast

The yeast part I was worried about worked out just fine. This is an incredibly tasty bread that's super easy to make and will certainly stay in rotation! The smell when you cut it is the best yet...delish. Thank you Sally! (recipe is at the link)

I had somewhat of a glich when it came to steaming as this is my very first loaf shape, so no dutch oven - and no baking stone. I did both the water tossed in a cast iron pan on the bottom of the oven and the wet roasting pan cover -- though I didn't first test to see how it would fit inside the rimmed baking sheet - it didn't, but I still got good oven spring and the thing I'm most proud of: ears!! I got ears!!! The bad part is I kinda burnt it. When it said bake 10-15 mins longer I let it go 10 and checked it and well, I nearly ruined it. However, it tastes great (and not burnt!) so it all came out ok in the end.

In fact, I went outside this morning to take some pixs (hoping it would look less burnt in bright sunlight) and the 3yro next door says "what have you got in your hand" me: bread I just baked. him: "Can I smell it?" It was soooo cute I walked over and he took a big sniff right in the crack and I said can you smell it? His eyes got all big and said "YES, yes I CAN!" "How did you do that??" ...it was the cutest thing. smileys/smile.gif

I think the crumb is perfect, and you are right, this is such a nice recipe, not too hard to put together, I should do that one again sometime

your shaping and slicing were absolutely flawless!

 
I LOVE dark skinned breads--give me good olive oil, pepper and maybe a little. . .

Salt and I will eat the whole loaf.

That is a nice looking loaf, and I would eat it and fight you for the crusts. Maybe it is not the perfect dark brown you might have envisioned, but keep practicing and you will nail it.
