I've had to simplify my way of cooking. But I have come across some recipes that are really simple but tasty and fits right in for me right now. I did start therapy 2 days ago so maybe it will improve. Anyway, last weekend PW made Tomato Soup and Grilled Cheese Sandwich. I made them yesterday and YUM! Both the soup and the grilled sandwich!! Here's the soup with my very simplified directions. I don't need all the detail she gives probably for newer cooks.

Best Tomato Soup Ever

Serves: 6 to 8

1 medium white or yellow onion

6 tablespoons (3/4 stick) butter

Two 14.5-ounce cans diced tomatoes

One 46-ounce bottle or can tomato juice

3 tablespoons sugar

3 chicken bouillon cubes

Freshly ground black pepper

1 cup sherry, optional

1 1/2 cups heavy cream

1/4 cup chopped fresh basil

1/4 cup chopped flat-leaf parsley

Melt the butter in a large pot or Dutch oven. Throw in the onion and cook until translucent. Now dump in the diced tomatoes and stir to combine. Add the tomato juice,

sugar and chicken base to the pot and lots of freshly ground black pepper. Stir to combine then heat almost to a boil. Then turn off the heat. Whiz with emulsion blender and add in the sherry if desired. Stir in the cream. Add the basil and parsley and stir.

Serve the soup warm!

Here's the Grilled Cheese. I have never used green chili's or sliced

red onions on mine before but wow was it good! I used Provolone and Swiss and I just copied this from the site so I haven't simplified her very detailed instructions.
Best Grilled Cheese Ever

4 poblano or Anaheim chiles (or you may use canned whole green chiles)
1/4 cup white vinegar
1/2 red onion, thinly sliced
1/4 cup mayonnaise
1/4 cup Dijon mustard
8 slices rye bread
12 slices provolone
2 ripe tomatoes, sliced
8 slices Cheddar
1/2 cup (1 stick) butter, softened

Begin by roasting the chiles over the flame on your stovetop (or under the broiler) until the skin is totally blackened (if using fresh). When the chiles are totally charred, throw them into a plastic bag. Seal and allow them to steam and cool.

Next, pour the white vinegar over the sliced red onion and let them sit awhile. This'll take away a little of the crazy onion flavor and leave them with a nice sweetness.

Finally, make the special sauce: equal amounts of mayonnaise and Dijon. It's the simple things in life!

When you're ready to make the sandwiches, scrape the blackened skin off the chiles. Scrape out the seeds, too, so you'll wind up with big pieces of roasted green chiles.

For each sandwich, generously spread 2 pieces of rye bread with the special sauce. Lay on 2 slices of provolone, 2 slices of tomato, 2 slices of Cheddar... a nice layer of roasted green chiles... a few red onion slices... and one more slice of provolone just to hold it all together.

Top with the other slice of bread and spread the outsides with a good amount of butter.

Toast the sandwich in a skillet over medium-low heat until the cheese is thoroughly melted inside. Be careful not to burn the bread!

I (literally) feel your pain but there IS light at the end of the tunnel . . .

Fractured my T-12 a few years back, wore a brace for 6 months. Used it like a utility belt. Clipped a phone to it, tucked a kitchen towel into the side, hung tools off the various bars and straps. Had a hard time sneaking up on anyone though, so much racket. It got better. Not perfect, mind you but none of that wake-up-and-scream kind of thing anymore.

Hang in there.

 
Is it me or does Ms. Drummond's food strike you similarly to Paula Dean's. She took quite

a public drubbing for her choice of recipes (not to mention her other "peccadilloes") after she turned up diabetic. I wonder at what point the Drummond family will begin to need insulin, statin drugs and bypass surgery.

 
Aww, it's always good to have a fellow comiserator..L1 here. But

found out at the same time that there was a previous L2. I didn't know at the time what it was, just pawned it off to out of place. So now I take "Pump Up the Bones Pills". And
I know exactly what you mean by wake up and scream.....I'm getting better.

 
Oh, I don't know...isn't it all about moderation? I was never a

Dean fan but I enjoy P Dub. I don't eat her cooking every day but I've gotten some really good eats from her. I'm not gonna worry about her kids. It would be a good thing if half of American kids got the exercise that those kids do. They aren't exactly sitting around in front of a computer playing games. Try this grilled cheese sandwich sometime, you just might like it.

 
Food is similar, but I suspect the daily activity levels are quite different.

I haven't watched the PW show, but don't they live on a ranch? I'm thinking there's quite a bit of physical labor going along with those more substantial meals.

Her pain sounds unbearable. I hope you are well into your recovery and feeling better. smileys/smile.gif

 
Oh no, no, no, no, la, la, la, la,....I'm not hearing that! All I want

is to stand 3 hours without excruciating pain. I'm not going there! I do wish her well though. smileys/wink.gif.

 
Hers prevents her from standing for more than a few minutes at a time.

I also think it took a very long time for it to be properly diagnosed, so that probably didn't help. smileys/frown.gif

 
O, my mom fractured her back at age 73 while lifting my uncle. She healed without surgery.

She's 85 now and takes meds for osteoporosis, but she hasn't broken anything in years now.

 
I saw this episode and recipe and wondered about the 1 cup of sherry---seems way too much. did you

use that much?

 
Ree and her family work their ranch so they're out there every day

riding horses, herding cattle etc. I think you can eat anything you want if you work hard physically. As to cholesterol and heart health well, people in the country are mostly into meat and potatoes period. I think she does a good job adding in more healthy things when they let her smileys/smile.gif

 
My aunt broke her upper back in a car accident and wore the turtle carapace

for a year or so. She still has a lot of pain but it was multiple vertebrae and other things.

You know how it always is with an injury, the first 3 months are pretty grim and then month by month things get better. Yesterday was the first day after PT that I felt no pain and walked without a limp - 14 months after surgery. Bone pills are great! I just added another one - Serrapeptase - to my Vitamin D and other pills.

Orchid I hope you notice improvements week after week, it's a trying thing having to heal but being diligent in your PT really pays off.

 
I have had 3 therapy sessions with this sweet faced little MASOCHIST!!!!

I truly can say I am not hurting as bad, and I have had a really busy day with things that usually would make me cry right about now. I'm hopeful...it's been a long time. I want to get back to being more of me.
