Pork Tenderloin with Red Cabbage and Applesauce
Serves 4
2 T olive oil
2 pork tenderloins
kosher salt and pepper
1/2 small head of red cabbage thinly sliced (6 C)
1/4 C chopped fresh parsley )I omitted
1 C applesauce. (I had homemade)
1T red wine vinegar
Heat oven to 450. Heat oil in a large ovenproof skillet over medium-high heat. Season pork with s&p and cook until browned
Add cabbage and 1/2 teasp salt to skillet with the pork and toss to coat. Transfer to oven and cook until the pork is cooked through, 10-12 min. (I cooked until 155 degrees). Let pork rest 5 min. Add vinegar and parsley to the cabbage and toss to combine. Serve with applesauce and sliced pork.
