I finally got around to making these Sweet Potato Pancakes this

O, Tupelo Honey restaurant in Asheville does a sweet potato pancake and they
top it with spiced pecans and peach butter. I've made the recipe from their cookbook and the on-line versions and none matches the ones I've had in their restaurants.
Not sure what I'm doing wrong, but I think I'll try your version next.
