is that I kept thinking I knew what I needed while at the store, coming home to discover I was missing one or two ingredients. I finally made a proper shopping list and whoa, what a simple, wonderful recipe! I'm glad I waited until I had all the ingredients because the balance of flavors is perfect. I used thighs and legs, but otherwise I didn't change a thing. The leftovers reheated well.

If I had to describe it I would say "Asian Molé."

We enjoyed it with an improvised coconut rice (I added canned coconut milk to my regular braised rice recipe. Next time I'll try CathyZ's recipe for cilantro-coconut rice) and sauteed yellow crookneck and zucchini squash with onions and red bell pepper.
