I foolishly bought a bunch of super ripe bananas — now what?

What can I say, they were on sale for $.98. Other than banana bread, what’s a single girl to do (who is mostly low carbing) with all these bananas? I thought I would just freeze them and use them as needed, but, after I had already bought them of course, remembered recently I made some banana bread with frozen bananas and it wasn’t nearly as good as when I made them with fresh bananas. I had to nearly overbake the loaf. The frozen bananas were too wet, even though I drained them.

So other than 942 loaves of banana bread that would never fit in my teeny tiny, ridiculously teeny tiny freezer, any ideas?
 
well, my last batch of brown ones went into a banana bread that was dropped off for the library's breakroom. It was during my "lost-mojo" days so I'm hoping it was okay. I didn't slice to help it stay fresher longer. I've taken baked goods to the homeless shelter, sheriff's department, women's shelter, police department and my local tire store that checks my tires for free when a light comes on. Unfortunately, our fire department is volunteer and only manned when in a situation or they'd be getting some.

It's a selfish motive. I want to bake and my thighs simply can't get any bigger. Well, technically, they can but they really really shouldn't.

People are always startlingly surprised when you hand them free desserts. I always include a mailing sticker with my name, address and phone number and warnings if there are nuts, etc.

That's so lovely of you Marilyn. Yes - people are so appreciative of an unexpected sweet treat (and flowers - I add flowers to my summer repertoire) .

Not exactly low carb, but they freeze well in case of unexpected guests. Can also use the frozen bananas for a smoothie if you want to pause diet to treat yourself to fruit. :)

This is an incredibly great idea! I’m doing it and bring it to my several drs offices!

I might pause because I’m at a discouraging plateau. I lost 20, but been stalled for 2 weeks.
