Michael, we usually grill one on Thanksgiving if we need more than one for...
...a big crowd. That's a bit different than a truly smoked bird, as the smoked turkey would be done on a smoker and taste much more "smokey".
When we serve ours, we serve it with all the regular and standard Thanksgiving sides. The real fun comes afterwards with the leftovers.
Smoked turkey sandwiches with warm bread, real mayo (or aioli) and a slather of cranberry chutney is heavenly.
Smoked turkey makes a wonderful addition to tortilla soup and any mexican dish using shredded turkey or chicken. It is FABULOUS in Dawn/MO's creamy enchiladas!
Hope this helps. Much of what we make on the grill gets eaten up so fast, we rarely need to deal with too much in the way of leftovers!
