I had pasta with wild porcini creme sauce last night! :-)))

I was on my way home from work today and I had just turned into my front yard when I saw it.

There - under the tree, with a beautiful brown hat, there it was.

I jumped out of the car and held my breath as I approached the site:

It was a porcini mushroom!!!

And then I found another one. And another one!

I brought them inside, cleaned them and sliced them and sauteed them in some butter. I added some heavy cream, salt and pepper, and served the sauce with pasta and herb baked chicken breasts.

Needless to say, this is the best meal I've had so far this summer!

It's like having a culinary gold mine right outside my front door.

 
This sounds heavenly. I've never seen a fresh porcini, as far as I know. You were so brave,

I'm scared to pick wild mushrooms, although my dad forages for morels in the spring. Is there a look-alike poisonous variety for the porcini that one has to look out for? Are there a lot of wild porcini in Norway?

Ever so often, especially during the rainy season, mushrooms grow in my herb pots. I always wonder if they're edible, but I'm not that curious!

 
We have tons and tons of wild porcini over here.

There isn't really any poisonous look-alikes to porcini here, but there are a couple that can make you feel sick after a meal.
But, if you know what to look for, you can't mix them up.

I know 4-5 safe mushrooms - all great culinary wise - and I try to get out once or twice in the summer to go mushroom hunting. I love mushrooms.

I can't wait to get to Italy again, to buy some fresh porcini and cook them up.
I thought Fall was porcini season, but I guess the weather might be similar to Italian fall where you are now?

 
fresh porcini are such a rare treat, what a wonderful surprise for dinner smileys/smile.gif we

have them here (pacific NW coast) and our season is the fall. there are only a few that I know well enough to pick but the porcini are the only ones I go out for. they need to be dealt with ASAP and cooking one fresh is just a little slice of heaven!

in response to the other posts, the look alike shrooms here are deadly. it's easy to tell which is which since porcini have a "sponge" under the cap instead of gills. still, people pick shrooms without knowing and what they should be looking for.

our season is fall. Eva, I'm sooo envious that they are growing in your yard. I've been planting spored caps around the house for 6 years and still nothing. the death caps come and the porcini follow and seem to grow together. so far, I only have the death caps smileys/frown.gif

I honestly don't know what weather we have now. It's been raining for

six weeks and it's cold!

The Italians have my deepest sympathy if they are experiencing this every fall.

(I'm so miserable. Last year we had 85 degrees and full sun in the beginning of July.)
