I hate to throw out food; What to do with leftover cooked rice from Chinese takeout? I am open to

suggestions. Only thing that comes to mind is fried rice, which I have never made... So open to ideas / recipes.... (It's the larger container, if that makes a difference, vs. the small one)......

 
Here's a fried rice from Katie on The Kitchen at FN. This is a really

good one. I made it after I saw her make it and I just happened to have left over hot dogs so the timing was perfect for me. Just leave out the hot dogs (although the dogs are really good in it) a use shrimp or pork or what ever you have. Or use a different vegetable that you might have on hand or like better. Or make a meat that has a sauce that you just reheat the rice and put it over. All Cajun type dishes need rice to go over. Sometimes I like to make a very homey type casserole with can chicken or tuna, rice, can cream of mushroom soup, cheese mixed together and baked in the oven. Lots of things you can use it for so Don't throw the rice out!
Hot Dog Fried Rice
Yield: 4
2 cups broccoli florets
2 tablespoons coconut oil
1 onion, halved and thinly sliced
1 tablespoon grated ginger
2 cloves garlic, grated
3 cups cooked brown rice
1 cup diced hot dogs
3 tablespoons soy sauce
1 tablespoon toasted sesame oil
2 scallions, white and light green parts, sliced
4 fried eggs, for serving
Chopped fresh cilantro, for serving
Sriracha sauce, for serving

Bring a pot of water to a boil; prepare an ice water bath. Blanch the broccoli in the boiling water, then immediately transfer to the ice water to stop the cooking process. Drain and set aside.

In a large skillet over medium-high heat, add the oil and onions and saute until the onions are translucent and tender, about 5 minutes. Add the ginger and garlic and quickly stir-fry for about 30 seconds. Add the rice, hot dogs and broccoli and stir-fry 2 minutes. Stir in the soy sauce, sesame oil and scallions.

Serve topped with fried eggs, cilantro and Sriracha.

 
Just use as based for any stir fry veggies: layer rice, beans, veggies & top with any sauce/salsa

Since I'm eating vegan at the moment, I'm eating a lot of rice (though brown) and use it as a base additive for lots of things. You can even roll it up in a wrap with sandwich fixins or of course sushi.

 
Fried rice is dead easy. You can also put it with some

thawed frozen spinach and cheese and a bit of onion to make a side dish for roast chicken or such.

 
Here's our favorite fried rice recipe we use with leftover rice

Serves 8

3 T. extra virgin olive oil
3 T. chopped garlic
1-2 T. finely chopped, seeded fresh red chili such as cayenne
2 tsp finely chopped fresh ginger
4 cups cooked basmati rice, chilled at least 8 hours
1.5 tsp. salt
1 tsp. freshly ground pepper
¼ cup packed drained sun-dried tomatoes
3 T. finely chopped scallion
3 T. finely chopped fresh chives
3 T. finely chopped fresh cilantro
3 T. finely chopped flat leaf parsley

Heat a 12 inch nonstick skillet over high heat until hot. Add oil, garlic, chile and ginger, then stir-fry 15 seconds. Add cold rice, salt and pepper, then stir-fry, pressing on rice to break up any lumps, 2 minutes. Add tomatoes, scallions and herbs, then stirfry 3 minutes.
