I have a couple quart ziploc bags of frozen fresh lake fish filets.

The plan was to have fish fry. Which I am still going to do, but I am exhausted. We have been house hunting for days and days. I am having possibly 14 people for dinner that night. There is no way this amount of fish will feed that amount of people. Any ideas of what to fill in? My grandmother used to have a smelt fry and she did homemade corn dogs for the kids, so I am planning on that. What would you serve with it, how much would you serve with it, please please do my menu for me? Seriously, please please do my menu for me. Oh and then there is this one other requirement, as inexpensive as we can do it. I have been feeding a lot of people for the last 5 days, and my food budget is almost depleted. Oh and if you can find a house for my MIL and my SIL (one wants new and one wants old, I am going with the one who has the money, so it is newish) I would forever be in your debt. Thank you in advance.

 
Can't help with the house from this distance *g* but how about scalloped potatoes

as a nice filler, or twice-baked potatoes that you could fill with all kinds of stuff if you like and you could even do them a day ahead then bake off at serving time, a 10 lb. bag of russets is pretty inexpensive.

Or you could go with fish tacos with accompaniments like Spanish rice, refried beans, quesadillas and a nice big 7 layer dip with tortilla chips as an appetizer...everyone loves that. You could also do some other tacos like with ground beef or chicken.

Or could you do the fish as kabobs on skewers and possibly do other skewers of veggies to accompany? A big salad and rolls (or garlic french bread) and you're there. Angel food cake slices, fresh strawberries and whipped cream for dessert.

Or another route you could take...how about the fish and some oven french fries / corn on the cob / baked beans / coleslaw. All fairly easy.

I'm sure others will come forth with ideas for you too. A good night's sleep will put you in the right perspective. Be sure to relax and enjoy your company. :eek:)

 
REC: Creamy Cole Slaw

This easily makes enough for 8-10, so I'd increase it by half or even double for 14. Classic creamy, simple, cheap, from the old Junior's deli in Brooklyn. Every single time I make this, people ask for the recipe. It keeps well, so you could even make it a day or two ahead, though the dressing gradually dilutes.

Creamy Cole Slaw

For the mayo dressing:
2 cups Hellman's Real Mayonnaise (not the light variety)
2 tbsp cider vinegar
2 tbsp sugar
1 tsp minced garlic
1 tsp ground white pepper
1 tsp salt

For the vegetables:
5 large carrots (1/2 lb), peeled
1 head green cabbage (2 lb)

Put dressing ingredients in a small bowl; stir until well mixed.

Coarsely shred the carrots in food processor, using the medium shredding blade, or shred with a box grater. (You will need about 2 cups.)

Core cabbage. Coarsely shred in food processor fitted with medium shredding blade, or quarter the head and cut crosswise into long, thin strips. (You will need about 12 cups.)

In a big bowl, toss carrots and cabbage together. (Use your hands--it's way easier.) Pour over the dressing and toss until all vegetables are well coated. Refrigerate until the slaw wilts a little, about 15 minutes.

The flavors improve if you let the slaw sit in the refrigerator for about an hour. Toss again before serving.

Makes 3 quarts.

 
Batter dip fish pieces and make Fish Tacos....lots of inexpensive add-ins with that...

The already fried pieces can be kept hot in the oven if you need to serve en mass...or maybe some manly man will take over the hot boiling oil task (WARNING...DANGER INVOLVED...POTENTIAL LOSS OF LIFE AND LIMB...MUST HAVE TESTOSTERONE! AND BEER NUTS!)

And my mother-in-law made an offer on a house this morning. So no more looking, yay! Hopefully, everything will go through, otherwise she is just going to fly out again. In any event, the fish tacos sound perfect and everyone will love them. Thanks!!!

 
I think Pat's idea of corn on the cob/baked beans/cole slaw is excellent, and shouldn't break the

bank. Warm up some inexpensive dinner rolls, too, and I'd get some cream cake slices from Wal-Mart and maybe some ice cream to top them. Also, put your company to work to help you.

Thank you again! I used a Zataran fish fry crumb mixture and the fish

was just delicious. I had forgotten how delicious lake caught fish were. Even my son, a confirmed fish hater loved this fish. Thanks again, a great use for that amount of fish for that amount of people. It was kind of nice because one of my guests thanked me for having a different cuisine than she was used to, no meat and potatoes. There is hope yet.

When I made them last night, I didn't feel like using a beer batter so I used Zataran's Fish Fry which I really liked and it isn't quite as heavy. I mix the sauce with the cabbage slaw and add sliced green onions and cilantro instead of serving them separately. I served with pico, green and red salsa, and hot taco sauce. It was a delicious dinner. Thanks again for the ideas everyone!
