He writes the most incredible descriptions of things that he’s cooked, he spent a lot of time in the Czech Republic and in Vienna during his fascinating career in the “circus” and translating, so his go-to dishes are do unfamiliar and yet so interesting to me. In his retirement he has been writing up walking tours from the London area and environs all accessible by public transit. Such a fascinating man. Now he’s added a recipe page to his site so I thought I’d link it here because some of the recipes he’s given me over the years have been so outstanding. A caveat that he’s just started to populate it so it’s not very fancy or descriptive. He mentioned he’s making his sticky pork belly recipe for dinner tomorrow night, but using walnuts since chestnuts are not yet available. I had to look that up and immediately wished I had a pork belly in the fridge.
