week for a party Fri. I'm thinking of making it Thurs so it holds better for cutting into small pieces the next day. Does this sound reasonable to those who've made it?

I wonder too if I should keep it refrigerated or just leave it at room temperature from one day til the next evening?

I think both are doable. I make mine a day ahead lots of times. Always good.

Just cover well with plastic or foil. The icing hardens up a bit so it won't stick to plastic too much.

 
It's no problem to bake it a day ahead, at all! smileys/wink.gif Just lay a piece of waxed paper or

aluminum foil loosely over the pan.
