I have a ton of red-skinned potatoes (medium-sized) that are about to collapse.

Any ideas about what I can do with them? I'd like to cook them all at once; my one thought is mashed potatoes. (Do mashed potatoes freeze?)

Something relatively easy would be good; still not up to much in the kitchen.

 
Would they be good in a potato leek soup? I use the version from Cooks Illustrated - no cream in it

freezes nicely. It's a rustic version - easy to make. And I boat motor it to add thickness to it - but not so much that it all becomes liquidly smooth. I like it with chunkies.
