and I wanted to make it next week once it finally starts getting fall like here. Can't find a recipe that I can get excited about. Any ideas? I have three little boys who will eat anything as long as it isn't too, too spicy.

turkey white bean chili

I love this stuff! But don't tell the chili aficionados, it's not even close to the real stuff. Let me know if you want the recipe.

 
I would love the recipe...however...

I am really looking for something that I only need to cook once. Not something where I need to roast the tenderloin and then use it as an ingredient in a separate dish. Rather, a marinade or rub or something that I can do and roast it and voila...dinner is ready.

Turkey parmigiana

Slice into medallions and pound llightly. Dip in beaten egg and them coat with seasoned Italian bread crumbs. Saute in butter to brown. TOp with bottles spaghetti sauce, and simmer on low for ten minutes. Place and serve with grated parmigiano-reggiano cheese.

 
I'm thinking that any rub or roast method for pork tenderloin would work well with the turkey.

 
Alrighty then...I wanted to suggest my favorite marinade but since I have

never used a turkey tenderloin I was hesitant. I use this recipe on pork tenderloin. It is my absolute favorite of all. I marinate for at least 24 hours and really love to do it for 2 days. I grill it but it could be done in the oven. And no, it wouldn't be to hot for the little ones. The heat from the chipotles doesn't hit you. Just the flavor.

Chipotle & Lime Grilled Chicken Breasts

Serving Size : 6

Amount Measure Ingredient -- Preparation Method

6 whole chicken breast
1/4 cup olive oil
1/4 cup orange juice
2 tablespoons lime juice
2 tablespoons soy sauce
1 teaspoon cumin
2 teaspoons chipotle peppers -- chopped
2 teaspoons oregano
2 teaspoons paprika
1/4 cup cilantro -- chopped
4 scallions -- minced

Combine above ingredients in a food processor or blender and process until smooth. Marinate chicken breasts in marinade at least two hours or preferably, overnight.

Grill marinated chicken until cooked and golden brown.
