I have a two-pound beef chuck arm roast that I need to do something with.

Fingers have dyslexia today - sorry, that's Beef Diablo, sounds like something you'd like:

4 pounds boneless beef arm roast
3 potatoes peeled, sliced
1 onion sliced
2 tablespoons flour
1 tablespoon prepared mustard
1 tablespoon chili sauce
1 tablespoon Worcestershire sauce
1 teaspoon vinegar
1 teaspoon sugar

rim all excess fat from roast. Place potatoes and onion in bottom of crockpot. Make a smooth paste of flour, mustard, chili and Worcestershire sauces, vinegar and sugar. Spread over top of roast.

Place roast in crockpot (cut roast in half, if necessary, to fit easily) on top of potatoes and onions. Cover and cook on LOW setting for 10 to 12 hours (on HIGH setting for 5 to 6 hours).

Recipe yields 4 servings

 
Thanks D. I decided to take my chances and put a dry rub on it

and put it outside in my "Set and Forget It" rotisserie, that I just love. I got the extra large one that can be used outside. I forget to use it more often. I figure if it turns out too tough, I can always braise it for burrito filling or soup, something like that. I have filed the Beef Diablo for a future roast. Thanks!
