This is delicious. I love the sugar coating the pan which gives the bread a nice little crunch. I am going to start sprinkling the top with a little sugar too, for an extra crunch.

The trick for these loaves not to stick to the pans, which they will, LET THEM COOL before removing them from their loaf pans. I learned this the hard way. I toasted them in the toaster and they were great like that with a little butter. Enjoy!

Orange Zucchini Bread

Amount Measure Ingredient -- Preparation Method

2 cups processed zucchini (I just chop up in a food processor)1 whole orange, ends cut off and seeds removed (I cut in small wedges and process the whole thing in a food processor)

2 cups sugar

1 cup oil

3 large eggs

3 cups all-purpose flour

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon cinnamon

1 tablespoon vanilla

Mix all ingredients until combined. Butter pans and coat with sugar. Bake at 325 for 1 hour.

I bake them in the baby bundt pans (six to a pan) and bake them for 20 minutes.

Can frost with cream cheese frosting.

Yield:

"2 loaves"

Sounds good, Dawn. I can see adding

some cranberries (dried or fresh) and/or toasted walnuts as variations. Or even chocolate chips. I'll bet the breads would be darling in the mini loaf pans too. Would make for nice holiday or hostess gifts in clear cellophane bags tied with raffia or colorful ribbon.

 
I don't but you easily can, just to make it easier to pop them in and out of the oven.

and it's actually not a bad idea to do them on a sheet pan/cookie sheet because it helps promote more even baking.

 
Yep, I cut the ends off the orange, check for seeds and pop the whole

thing in the processor and process until it is very finely chopped. I actually cut the orange into at least eighths to make it easier on the processor. I know it sounds weird, but it is the whole orange.

 
I actually have one of those mini loaf pans-in-one that I have used.

I have also used the small foil ones. Lately, I have been using the regular-size loaf pans. I may have to look at pricing. I have been selling the large loaves for $7, but I could probably sell the small loaves for $2.50 or $3.00. I will have to consider that. smileys/smile.gif

 
I would buy a TON of mini-loaves, just speaking as an observer. smileys/smile.gif Perfect for this time of year!

 
I'd likely buy mini's too. BTW, I reuse those foil mini loaf pans

I have a bunch that I spray with Pam or w/e and then breads pop right out of the pans. Then I wrap bread in plastic wrap and tie with rafia. Great for gift baskets (selling point!) I also make hang tags, but you might want to use some cute labels. I like the ones on the linked to site.

Do you know of any site with free printables for food tags like the ones

shown at this site. I was looking last night on Pinterest, but you know how that goes, ADD and Pinterest: a match made in heaven!
