My 2nd recommendation is for Spectacular Lemon Mousse Pie

I found this recipe at the Oprah web site. It was made and submitted by Dorothy Lacefield, and it won the Best of Show at the State Fair of Texas.

I have personally tasted each of the layers, and they are beyond delicious. The pie is currently chilling in my refrigerator--I'll be able to garnish it out in about 45 more minutes. (I plan to pipe a row of sweetened whipped cream around the edge like in the picture, but I am going to add a bit of lemon extract to that sweetened whipped cream, and then I'll place some fresh raspberries and some toasted whole blanched almonds on top---used up every last lemon for the juice and zest so am doing the whole nuts in place of the lemon wedges. Some fresh mint leaves might not be out of place--I'll have to see if the mint adds any eye appeal.)

One of my catering clients came bringing me the recipe and asked me to make it for some guests she's invited over this evening so I won't actually get to eat a slice of this pie in its final state, but like I stated earlier--each and every layer is lip-smacking good! (Luckily, my customer brought me one of her own deep-dish 9-inch pie plates, and the filling fit into that okay and it turned out to be a really deep pie. If you don't want it so towering, then the 10" pie plate called for in the recipe should do the trick.) Bon appetit!
