I have "Caribbean ChickenThighs" cooking in the crockpot right now...

and was looking for suggestion for a side dish. Any ideas? Default is couscous and/or leftover sweet potatoes.

Here's the recipe, if anyone is interested:

2 lbs chicken thighs, skins removed

1 small can mandarin oranges

1 Tbsp lime juice

1/4 cup flaked and sweetened coconut

1 cup fat-free yogurt

2 Tbsp red pepper-onion-apple relish (from Harry and David) - or you can just use red pepper flakes

1 tsp curry powder

1/2 tsp soy salt

1/4 tsp black pepper

Place chicken in crockpot; add other ingredients together and pour over chicken. Heat on HI for an hour, then reduce to LO for about 6 more hours.

 
Hi Dawn....

the mandarin in a Caribbean dish is surprising and very unusual, wondering what that would taste like ( I personally just don't like flaked coconut, would rather have coconut cream.
The recipe in the link is more like that found in this region.
Now as you are cooking (perhaps this is too late for your meal) already, I'd have "rice 'n peas" as a side. Not add to your cockpot.....
This I'd do with beans or pigeon peas or lentils and rice, stir fry in a little butter and then cooked in a can of coconut milk (add some water and salt).
The road food dishes also serve a simple salad and a pasta along side their meat dish.....
Do let me know how you recipe turns out.

 
As Dawn says, Rice and Peas would go well with the chicken

RICE AND PEAS

1 19 oz can of pigeon peas or red kidney beans (well drained and rinsed)
2 cups boiling salted water
1/3 of a block creamed coconut
1 cup rice
1 small onion, chopped
1 clove garlic, minced
1 rasher of bacon or 1 tbsp. butter
1/4 tsp. dried thyme
1/2 tsp. salt
Pinch freshly ground pepper

* In a pot cook rasher of bacon or melt the butter.
* Saute the onion and garlic.
* Add uncooked rice, thyme, salt and pepper; cook for 1 minute.
* Add drained beans.
* Add 2 cups boiling salted water.
* Add block of creamed coconut.
* Simmer covered for 30 minutes or until rice is tender (about 30 minutes).
* Remove from heat take cover off the pot. Let the rice dry out a little.

I prefer to cook the rice and peas ahead of time, allow them to dry out a bit and then reheat in the microwave just before serving.

 
What a great sounding recipe, Sylvia....I tend to use....

a can of milk when doing the rice instead of or mixed with water. The block stuff I use in the meat sauce, it seems to thicken things a bit more.
The street food here often hage huge lentils instead of the beans, I love using them too.
Wonder how Dawn's meat turned out.

I also would've preferred coconut milk/cream, but was out of it.

The chicken turned out great!! The taste of the coconut with the curry was very good and they complemented each other well.

Saw your posts after we ate, so I just had some couscous with a spinach salad. Didn't feel like starting the rice that late, and the couscous only took 5 minutes to make.

Thanks for your suggestions though!
