dinner tonight. I've been reading over some ideas of what to add to it to jazz it up, since it seems like it might be kind of bland.

Vinegar (like a chutney taste), hot peppers, curry? Or coconut, cilantro, lemon juice? I don't want to get too many flavors in there - I'm thinking of serving it with bok choy and jasmine rice. Any ideas? Thanks in advance.

 
Mmm Curry, cashews and a lil sour cream. Note Charlies rec: for idea. Assuming marinade isn't

really strong. Rice would be wonderful, not a bok choy fan, so can't vouch for that!

I took your suggestion for curry

and added a little vinegar, lemon balm, basil, and some jalapeno pepper. It was very, very good. Not bland at all.

1" piece of ginger, grated
1 mango, pureed (because I made a mess of it when I was trying to cube it the other day!)
4 chicken thighs, skins removed except for one of them
(marinated in this concoction for a couple of hours)
then added
3 leaves lemon balm
3 leaves basil
1 T cider vinegar
1/2 jalepeno, seeds removed, chopped
1 tsp curry
salt, pepper

Cooked in crockpot on high for 5 hours and topped with some of the mango "gravy" and sour cream, chopped pistachios. Served with steamed bok choy with garlic, coconut white rice, and black beans. Not sure where I was going with this when I started, but will be a repeater, for sure.

REC Mango Chicken

The meat just fell off the bone, so I was able to take it for leftovers easily. You couldn't really taste the lemon balm or basil, although maybe it was there subtly.

With some leftover coconut cream, I think I'll add it to some peanut butter and make Thai chicken tomorrow. There is a restaurant here that makes that and I never was able to recreate it very well, but after tasting my rice I figured out what that missing ingredient was: coconut cream.

 
I don't know how that happened. But sometimes with my mousefingerpad,

it blocks out whole paragraphs and I don't always catch it! Here it is:
