I noticed a banner with linked recipes running across the top of a blogsite and there SIDE BY SIDE were the following:

LEFT link: Shredded brussels sprouts and kale salad

RIGHT link: Chocolate pudding.

I COULDN'T DECIDE!

My mouse hovered over the left...then it moved to the right hyperlink..back to the left, right, left, right...!

BRUSSELS SPOUTS AND KALE WON!

How is this even possible! I have purchased more 5 KG blocks of Belgium chocolate in the past 10 years than everyone in this site added together! (possibly excluding dear Meryl...although she never bought the 11 pound blocks like I do. And I've bought at least 15 of those.)

I think you've met your match - I buy those 11 lb. blocks of

Callebaut. Although, I have been having trouble finding the one I like - the bittersweet 815 couverture. On a recent trip to Belgium, we actually carried one of those blocks home in our suitcase! But, I definitely would have opted for the chocolate pudding!!

I can't get the 70% in 5KG blocks anymore. I use 811NV (~54%) and L6040 (60%)

mostly, but I really prefer 70% for the Dyslexic sauce.

So the last time I bumped it up to 75% pistoles, but they didn't have 5 KG, so I nonchalantly said: "Give me the next size."

Which was 10KG, not realizing that was 22 POUNDS of chocolate.

For a home baker. What was I thinking!
Oh ya...it was chocolate. I wasn't thinking.

 
I like the taste of the L6040 but it was too thick for couverture.

The 815 Excellent works for both couverture and baking, so I don't have to use different kinds. There used to be a place in NJ where we could get it (Qzina) but they have switched to another brand.

 
No, we decided to use the *too small* 24 inch just to get the CO.

I still haven't seen it.
