I have leftover peppermint ganache and would like to use it on the weekend to fill some cookies.

Ganache also freezes well. And...I just filled some crunchy flat oat cookies (from Ikea) with

ganache mixed with apricot jam...and the cookies got soft within the day. Still tasted great, but I didn't know I'd lose the crunch factor.

Have you done a test yet?

By the way, to your question: it will last a long time in the frig.
Even longer if you can keep from sneak-eating it with your finger.
Not that I would ever do such a thing.

 
Thanks. Got to go to the store again. My DH can't believe how many times I go to the grocery

store. My Pantry is bulging and yet everytime I try a new recipe, I don't have all the ingredients. Im in the process of making a 2nd batch of German Honey Kisses (family fav.) Also 2nd of Best Darn Sugar Cookies Ever (RZ #69736). I made up the dough for the sugar cookies and put it in frig for a day or so because I ran out of time. I had to throw out all the dough because it would not hold together to make balls. Never seen that before - thought I'd mention it so no one else has that problem. Works great if you make it within a few hrs.

 
ha, yes, I have some "deconstructed truffles" in my fridge too---at least a smidge is left.
