I have not been able to find my favorite salt, Diamond Crystal Coarse Sea Salt for a while now...

so the last time I ordered it on Amazon. I am down to my last container and went to order more and find out, the item has been discontinued by Cargill the manufacturers of Diamond Crystal. Blew me away because I was first told about this salt by a very good home chef, foodie and person who entertains many. I have used it for years. Anyone know why a company would discontinue a popular salt?

 
Is that the red box? I was always on the lookout for it because Traca said once

most kitchens she worked at preferred "the red box" kosher salt. I finally found it in Pittsburgh this last trip and bought one.

Oddly, i recently read where a TBL of Diamond kosher salt weights LESS than a TBL of Morton kosher salt. So if your recipe called for salt by TBL, you may need to make adjustments (like for brines, etc where a large quantity is used).

I know it's true for adjusting regular table salt to kosher (and vice versa) but I never knew there was a difference between kosher salts.

 
I still see it in the small canister I switched to Jacobsen Salt over a tear ago and

love it. It's the only salt where I can taste a difference.
