Our favorite is a burrito filling
I make this as appetizers with the small ones for parties and the big potatoes for us for dinner. Fill with your favorite burrito or taco filling, top with cheese and bake until the cheese is nice and melted. Serve with sour cream, of course.
My no fail for the burrito filling is stew meat in the slow cooker on low for 6 hours with a 2 cups of your favorite salsa and 2 tsp of ancho chili powder. Chipotle if you want to kick it up a notch smileys/smile.gif
