I have six potato skins, each with a healthy dose of potato still in them.

They are about 5-inch russets that I baked last night and mashed. I want to make something with them tonight, not baked potato skins, more like something for dinner. Any ideas? Thanks!

 
Our favorite is a burrito filling

I make this as appetizers with the small ones for parties and the big potatoes for us for dinner. Fill with your favorite burrito or taco filling, top with cheese and bake until the cheese is nice and melted. Serve with sour cream, of course.

My no fail for the burrito filling is stew meat in the slow cooker on low for 6 hours with a 2 cups of your favorite salsa and 2 tsp of ancho chili powder. Chipotle if you want to kick it up a notch smileys/smile.gif

 
I know this is too late but here is a fun idea

Use corned beef hash- cook it and layer some in the potato skin. Break two eggs over the top, drizzle with a little melted butter and pop in the oven to bake the eggs.

A breakfast dinner.
