red and full of flavor. Don't really want to make salad dressing with it. Do you think it would be good to pan fry potatoes? Any other ideas?

 
Sounds too good to waste it by cooking with it...

but you could use it to drizzle on cooked veggies like you might use butter or a nice olive oil.

 
What about some homemade mayo?

Maybe put a few other flavors in with it. It would be a pretty color.

 
add some when making hummus, especially if adding some roasted red pepper to the hummus.

 
Thanks to all of you for the good ideas. Too bad there isn't more of it. I could have roasted

pepper oil roasted potatoes with red pepper mayo or hummus.
