I just tried this with one potato with good results.
I was testing a new-to-me potato to see how well it would work for mashed potatoes. Samish River Golden Potatoes from Costco. Seemed to be fine, HOWEVER the 15 minutes of boiling (from cold water) was not enough cooking to put through my ricer. So I will need to boil longer on Thursday.
I've been doing it for years with tomatoes and peaches but had no idea!
I was happy to see that it would work with potatoes. Who would have thought?! smileys/smile.gif
We're headed to my daughter's for Turkey Day! Our soon-to-be one month old granddaughter will make it a special gathering this year! Her daddy leaves for the US Navy on Dec 8 so it's a bittersweet occasion.
