RECIPE: I haven't made this, but it sounds wonderful. REC: Smoky Sweet Potato Hummus

Smoky sweet potato hummus

1 pound sweet potatoes (roughly 2 medium)1 can chickpeas -- drained and rinsed

1 teaspoon chopped chipotle chili -- canned in adobo sauce

1 garlic clove chopped

2 tablespoons fresh lime juice

2 tablespoons olive oil

2 tablespoons tahini

course sea salt and freshly ground pepper

Pre-heat the oven to 350 degrees.

Pierce potatoes several times with a fork; place on a foil lined baking sheet. Bake for 1 hour or until tender. Cool slightly, then peel and add to the bowl of a food processor. Add chickpeas, lime juice, tahini, olive oil, chipotle and garlic. Puree until smooth and thin with up to 2 tablespoons of water if necessary. Add ¼ teaspoon salt and season with pepper. Refrigerate for up to 1 week in an airtight container. Garnish with additional olive oil and smoked paprika before serving.

Makes 4 cups

In that amount and with the garnish, I think it would have a smoky flavor. I am

going to try this soon, and I will get back to you on the results. I am going to make this for the market, and I have a feeling it is going to be a very good seller. The recipe uses smoked paprika as a garnish, so that would add to the smokiness factor also.

 
LOL. Well, in my defense, they did HIDE the smoked paprika

in the instructions and omitted it from the list of ingredients.

I consider myself a good enough cook to look at a list of ingredients for something simple like hummus and know how to put it together without a detailed reading of the instructions when I am skimming recipes.

Just too much information waiting to go in these days and not enough time.
