I’m always surprised that the heat is wimpy in dishes using those peppers unless there are a lot of them. Years ago the first time I had orange chicken it was highly spiced and had a ton of chiles. Most of the times I’ve had it since it is insipid Americanized junk.

 
Could be very hot, obviously, but we recently had a dish at a local Chinese place...

...that was loaded, and I mean LOADED with dried red chiles. I remember looking at the plate when it hit the table and all I saw was chiles with little strips of onion and chunks of chicken. Mostly chiles!

I was told the dish was authentic to the region (don't remember which region) and that the chiles were imported from that region. The waitress assured me it was not as 'dangerous' as it looked, and to try it.

I did, and she was right. It was spicy, but not nearly as spicy as it looked on the surface. It was good, and the chiles had a nutty, salty flavor that was delicious!

Appearances can be deceiving, at least sometimes. Proceed with caution, though!
