I just bought some lamb osso buco in Costco. Do I just use one of my lamb shank recipies?

I would think so. Just brown and braise; it's the flavours that are key. Tomatoes, beans, red wine

mirepoix, thyme or fennel, maybe some lemon. Lots of other good stuff to go in. I've never seen lamb cut this way. A gremolata might be good as well.
