I just cooked some cranberries - any idea of what I can

make with them now, other than Richard's cranberry sauce (will make that next time, didn't have any booze in the house!)? I'm thinking about making a covered feta roll (recipe above), but I'm not sure how to get it to stick to the cheese as good as the one I bought, and I think it'd come out too messy unless I dehydrate it a little for that.

Any other ideas? I added some vanilla and cinnamon (and sugar) and boiled it for about 20 minutes - until the popping stopped, just like popcorn...

Maybe savory quick bread, don't want to have sweets around.

 
I understand it makes a delightful facial scrub. Leaves you ruddy as a beet for weeks and weeks.

Really, slather that stuff on for a couple of hours and you'll look like you've got second-degree burns covering your face. And not in that "good" way but in the "ohsweetmotherofgawdwhathappenedtoyourface" way.

Don't let anyone drag you to the emergency room though, it will eventually wear off and just imagine the fun you'll have! We do it every year.

 
Not a rec; but an idea... add toasted chopped walnuts, spices, etc. spoon over brie and bake.

Cranberry Meatballs - with the wine or without. My kids loved these smileys/smile.gif

Cranberry Meatballs

1 pound ground beef (or turkey)
1 small onion, grated or finely chopped
1 TBSP olive oil
3/4 cup Italian breadcrumbs
1 egg
1 TSP Worcerstershire sauce
1 TBSP Dijon mustard
1 TSP each, salt & pepper
Preheat oven to 375F.
Saute the onion in olive oil over medium heat until soft. Allow to cool. In a medium bowl, mix together the cooled onion, breadcrumbs, egg, Worcestershire sauce, mustard, salt & pepper. Add the ground beef; mix lightly, but thoroughly. Shape the meat into 1 inch meatballs. Place on foil or parchment-lined baking sheets. Bake for ~20 minutes, or until cooked through. While the meatballs are cooking, prepare the sauce.

Cranberry Sauce:
1 can whole berry cranberry sauce, or a batch of sauce made from a bag of cranberries, as instructed on pkg
½ cup packed brown sugar
¾ cup of your favourite red wine
1 TBSP Dijon mustard
2 TSP Worcestershire sauce

Combine everything in a pot and bring to a boil. Reduce heat to a simmer; cook, stirring frequently, for ~ 10 minutes.
Pour the sauce over the cooked meatballs, lightly stirring to coat.

 
Tee hee, Steve - I bet it'd work better than the smashed peas I used for

my face on Halloween ;o)
