I just made the Spiced-up Grilled Cheese sandwiches, and I got a big thumbs up.

However, I didn't follow the recipe to the tee. Hub doesn't like chipotle very much and I didn't have tomato paste so I used tomato sauce. I bought some Italian Peasant Bread (not sure what it is, rustic looking). I sliced the bread and used an extra sharp cheddar. I sliced the cheese, then the tomato, and then the red onion. Since hub ate the avocado for lunch, we skipped that. So I melted some butter, brushed some tomato sauce on one side of the bread, layered the cheese, sliced tomato, sliced red onion, and some wonderful smoked bacon that I get from the market(they love their meat here), that had been fried. I browned it slowly in butter to make sure the cheese melted. Sprinkled it with a little Lawry's Garlic Salt, and when it was almost done, sprinkled it with grated Parmesan and flipped it until the Parmesan was browned. A big 4 1/2 stars from very picky hub. I don't think I would include the avocado, as I am not a big fan of warm avocado. And since I am dieting, I did not get to taste it, but it sure smelled delicious. I think chipotle would put this over the edge.

*Edited to note that there is no avocado called for in this recipe.

 
Dawn, for the life of me, I don't see avocado in that recipe. I would add it though. love them on

grilled sandwiches.

 
Ang, that is because this recipe doesn't call for avocado...

I have had more problems with this recipe. I just had it in my head that there should be avocado in it. I think it's the bacon club sandwich thing, because I always put avocado in my clubs. Sorry for the confusion.
