I just signed up for the Cooks Illus. recipe testing. Has anyone who signed up heard from them and

I signed up about a year ago. They send recipes to test....

about once a month. They don't mind if you don't test every recipe they send. Usually they give you 5 or 6 days to test the recipe and then give feedback. I have enjoyed doing it.

Most of the recipes are first concepts on shortcuts to more traditional recipes, improvements to traditional recipes, or just downright strange combinations. You are the guinea pig, and then they use your feedback to tweak the recipe. The tweaked recipe probably goes through several rounds of testers, who suggest their own changes.

Usually, the recipe that comes out in the magazine is far removed from the one you test -- or, sometimes, the recipe just doesn't get published.

I was reading a blog from someone who tests several of the recipes and she mentioned that

the published versions are usually quite different from the version she tests.

 
Got a recipe to test today. Very exciting!

Of course, it will have to wait until I'm over this cold--everything tastes like cough syrup. Blech.

 
I haven't tried a recipe yet that I would make again without a lot

of adjustments, but I really enjoy trying them out. I don't always test every recipe they send, but they don't seem to mind.

 
Do you even hate dried shiitakes?

I am not overly fond of mushrooms either, especially when billed as they taste just like meat (portobellas), um, no, they taste just like big grilled mushrooms on a bun. But I love dried shiitakes.
