for the enchiladas and I didn't want to go out and buy any. I took a red bell pepper and cut it into about 6 wedges (seeded it first) and put a piece of aluminum foil on my glass top burner and turned it on high. I place the bell peppers on the foil flesh side down, covered with another piece of foil and pressed down with my bacon press (or any heavy weight), then flipped them over and pressed on them until I could hear them sizzling and smell the char. There wasn't much smoke involved at all (I don't have a hood fan) and I didn't have to heat up the oven. Then I just folded up the edges of the foil to finish steaming them. It worked great for when I just wanted one bell pepper.
