I froze my ground pork, 2.25 lbs worth in four quart-sized ziploc bags. I was able to flatten them to about a 1/4-inch thick. And being ocd sometimes, they were perfectly square and flat. I did them by hand first and got most of the air out, and then used someone else's tip, flattened them with a wooden cutting board. I love the fact of how quickly these will thaw when I decide to use them at the last minute. People are just so creative. On top of that, the store where I buy my meat, actually has a real butcher working most hours, so I was able to get fresh ground pork ground to the way I wanted it. Love it!http://lunchinabox.net/2008/04/11/speed-tip-make-individual-portions-in-freezer-bags/
