I was dying for gumbo, I have no time to make roux. I looked up microwave roux...made it IN THE MICROWAVE!!! Absolutely NO difference than making it on the stove, it IS tricky, and does depend on your microwave, and it's individuality, but I got it right the first time. Absolutely Awesome! The truck driver, who owned a shrimping boat operation and shrimped off the Louisiana Coast has been bragging about his gumbo and jambalaya for FIVE years, has he made me any, NO, came home at midnight, and scarfed it down. He didn't know I made the roux in the microwave, and had gumbo ready in an hour. I tried to tell him this morning, but he was a grumpo. So, I will just let him think I slaved.
Here is the recipe I used, but I did not trust the cooking times, and I was right not to.
I DID NOT do the trinity (veggies) in the microwave.
I DID need to spoon off oil
I just made the roux, then did the saute on the stovetop.
I did not use any water until I got the meat in.
USE at least a quart and a half glas bowl for this amount. I used a quart bowl, and it spilled over a bit.
you MUST cook it on high
Cook on high for 5 minutes, no more, then go to 30 second spurts to finish. It will go from not done to burnt in 1 minute.
