My long time housekeeper and her husband do not have a lot of disposable income, they both work hard, as does the eldest daughter who is out of school, going to the community college and has a full time job. They do not celebrate Christmas but do buy the four teens their warm, winter pajamas and give the dog a special toy. Today she told me that after she left my house, she was going home to make enchiladas for 20 people.. While she was here working, her 14 year old son roasted the chickens, had them cooled and ready for her to take apart. Two of the girls made the sauce and chopped the veggies. Once made, they were packing them up and delivering to several of her clients who do not cook and are very elderly, and keeping some for their dinner tonight. She said her teens were very excited about doing this. I loved this story and wanted to share with you on Christmas Eve. Merry Christmas all, as you enjoy the season in your own special ways.
