I;m taking turkey dressing to feed the homeless, Anyone have reciopes for large quantiy? TIA

How nice of you... here is our ol' standby. REC: Mom-in-Law's Stuffing

Makes about 6-8 servings, with leftovers. The prunes were my additions - I've also tried chopped apples and dried apricots. All very good, it just depends on what taste you're looking for.

1/2 stick butter or butter substitute
1 small onion, diced
3-4 stalks celery, chopped
2 1/2 cups turkey broth (homemade, or canned chicken broth)
Freshly ground black pepper
Pinch of ground sage
8 cups bread cubes
1 cup golden raisins or chopped prunes

Melt butter over medium heat. Add the onion and celery and cook until tender. Pour in broth, and add black pepper and sage. Mix bread cubes until they are moist; add raisins or prunes and toss until well-mixed.

Place stuffing in a baking dish, cover, and bake with turkey the last 30-40 minutes (325 degrees F).

 
I have to make 2 pans to feed about 50-60 people. I will be heating it up at home and taking it Hot

and ready to searve.

 
Along these lines, Stuffing Balls....

In the UK they only serve stuffing in balls, like giant meatballs - the first time I served stuffing in a bowl they all wondered whatit was and did not eat it because it was not "balls"

So for this event it might be good to make 100-120 balls, i.e. 2 per person, that is surefire portion control!
