I got this from my son's friend's mother a long time ago. We like it. I usually don't use the mushrooms, because I usually make this on a whim. I add thinly slice green onions to it also. I add a little more salmon, but you don't really need to. It's a nice sushi fix, when you don't want to go out to a sushi restaurant.

MIXING SUSHI

Amount Measure Ingredient -- Preparation Method

1/2 cup sushi vinegar3 cups cooked short grain rice

5 ounces salmon -- sauteed and crumbled

2 eggs -- scrambled

1 carrot -- grated

pea pods -- slivered

shitake mushrooms -- chopped

Mix all ingredients together and store in a bowl. Use it in maki rolls as desired.
